Okonomiyaki is a delicious Japanese savoury pancake made with flour, eggs, cabbage, and protein, and topped with a variety of condiments.
Okonomiyaki flour is made of unbleached wheat and soy flour, leavening and spices such as kelp for flavour. It's designed to rise naturally on its own, meaning you don't need to add extra ingredients like nagaimo to get thick, fluffy pancakes.
Mix 250g of okonomiyaki flour with 2 large eggs and 230ml of water. Stir in fillings such as shellfish, pork belly slices or bacon for protein and shredded cabbage. Preheat a frying pan, griddle or hotplate, apply a small amount of oil. Pour in the mixture and shape into a circle.
Perfect for breakfast, a snack or mealtime. Also a delicious way to get protein and vegetables sneakily into the kids diet!
