In the name Nama Shoyu, Shoyuis the Japanese word for soy sauce, while Nama means raw, fresh, or uncooked.
Kikkoman Nama Shoyu is a freshly pressed raw soy sauce and unpasteurized; thus it is characterized by a gentle, sweet scent and taste, and has a rich clear colour. The sauce is mild and brings out the flavour of the ingredients in dishes. It has plenty of umami and becomes more aromatic when heated.
Nama Shoyu is commonly used for Nimono (simmered dishes) and Itamemono (stir-fries), in addition to using the sauce the same way as regular soy sauce.
